The juice from the Blue Cane stalks that make up this cuvée is traditionally harvested between January and June, at the optimal point of the season. After juice extraction, fermentation, and distillation, the resulting Canne Bleue white rum is left to rest for several months to ensure an aromatic richness and an unparalleled smoothness on the palate.
