During the harvest period from February to June, the freshly cut blue cane is crushed to extract its juice, known as “vesou.” Its distinctive profile is revealed after fermentation and distillation. This year, the unusual drought produced Canne Bleue vintages with unique profiles. The blending of two exceptional casks makes this vintage a must-have.
