Named for the blue-violet reflections of its stems, Canne Bleue is a certified AOC variety of sugarcane, recognized for its exceptionally sweet organoleptic qualities.
After the extraction of the juice, fermentation, and distillation, the 100% Canne Bleue white rum obtained is meticulously tasted by Clément’s tasting committee. This is followed by several months of preparation before bottling, involving a cycle of blending, resting, and reduction through micro-bubbling using a micro-perforated stainless steel arm inserted into the stainless steel tanks.
